UK bakery-café chain Cornish Bakery has outlined plans to open four new outlets before the end of 2024 after achieving record group summer sales.
In a press release, the 61-store business said like-for-like sales growth across its estate reached 6.5% over the summer with weekly group sales exceeding £1m ($1.3m).
Following its launch in Nottingham in August 2024, Cornish Bakery will open further sites in Taunton, Winchester, Chelmsford and Milton Keynes by the end of 2024. The independent operator has previously outlined a goal to reach 100 outlets by the end of 2025 and received funding from UK bank Virgin Money in June 2024 to support the roll-out of new stores.

“Nottingham has been incredible. We have been considering the city for some time now and trading in the first few weeks has far exceeded our expectations. Couple this with us breaking the £1m in sales per week over the summer period and a glowing review from The Times’ food critic Giles Coren, it’s fair to say Cornish Bakery is in demand,” said Mat Finch, Managing Director, Cornish Bakery.
Founded in 1994, Cornish Bakery serves coffee supplied by London-based specialty roaster Union Hand Roasted Coffee alongside a premium food menu of pasties, pastries and brunch dishes.
