UK-based Cornish Bakery has reported its most successful opening sales week at its latest site in Milton Keynes, Buckinghamshire.

The premium bakery-café chain opened the store at the start of December 2024 and said the 2,150sq ft Centre:mk site generated over £40,000 ($50,000) in sales within its first week of trading, with long queues throughout the first few days.

“We all knew that Milton Keynes, with its significant scale of space, was going to be a successful opening for us. But even we weren’t quite expecting the extreme runaway success of the first week alone. Our first week sales were well in excess of £40,000 – yet another record-breaking result in the record-breaking year that has seen us surpass sales of over £1m-per-week and enter the Top 100 of all fast-growth retail companies in the UK,” said Mat Finch, Managing Director, Cornish Bakery.

In September 2024, Cornish Bakery reported record group summer sales, with like-for-like sales growth across its estate reaching 6.5% and weekly group sales exceeding £1m ($1.3m) in June, July and August.

Founded by Steve Grocutt in 1994, Cornish Bakery serves specialty coffee supplied by London-based Union Hand Roasted Coffee alongside a premium food menu of pasties, pastries and brunch dishes.

The independent bakery-café chain has opened five new outlets in 2024 to reach 65 sites across the UK, with a store in Cirencester due to open in early January 2025. In June 2024, Cornish Bakery received new funding from UK bank, Virgin Money, to support its goal of reaching 100 stores by the end of 2025.
