At Bluebird Coffee Roastery, where every detail matters, water has always been central to the brewing process. By working with Bluewater and its Café Station 1™, the team has found a new way to bring out the best in their coffee.   

“It’s not just about water quality – it’s about making every coffee shine,” says Dario Scilipoti, Head Roaster at Bluebird Coffee Roastery.  

“We’re thrilled to be working with Bluewater’s Café Station. It’s a completely unique system. For the first time, we can strip our municipal water entirely and rebuild it to our exact specifications using a proprietary blend of Swedish minerals. It’s completely changed the way we think about water and its role in brewing coffee,” Scilipoti adds.   

Brewing made simple   

With an easy-to-use app, Bluebird’s team can adjust water profiles for their espresso and filter bars independently. “This morning was my first time using the system with intention,” says Dario. “We brewed a beautiful washed Geisha from Janson on filter. Using the Light mineral profile, the florals were stunning, but we were chasing a bit more fruit and a longer finish. Switching to Original mineral profile gave us a vibrant, clean result we loved.”   

The team also runs Original on their espresso bar. “The coffees taste fantastic—bold, balanced, and super clean. Meanwhile, we’re preferring the Light setting for pour-over. Having the flexibility to customise water profiles for each brew is amazing,” Dario adds.   

More than just great taste   

The system doesn’t just enhance flavour – it’s practical, too. “We’ve noticed the difference immediately,” Dario shares. “There’s no scale build-up, which means less time maintaining equipment and more time perfecting our brews. It’s a small detail that makes a big difference in the long run.”    

“With Bluewater, we’re able to bring out the best in every coffee we roast,” adds Dario. “It’s changed the way we think about water and its role in extracting flavour.”
