As Head of Proposition and Product Innovation Arnaud Kaziewicz will develop the premium bakery-café chain’s pastry, cake and pasty ranges
UK-based Cornish Bakery has appointed its first Head of Proposition and Product Innovation to spearhead menu innovation ahead of planned outlet growth.
Arnaud Kaziewicz joins the UK bakery-café chain from London-based hospitality group RedEngine, which operates the Flight Club and Electric Shuffle social bar concepts, where he served as Head of Food.
Kaziewicz started his career as a sous chef at two-Michelin-starred French restaurant Le Champignon Sauvage, served as Head of Food and Beverages at Eat before the food-to-go chain’s acquisition by Pret A Manger in 2019 and appeared on cooking show MasterChef: The Professionals in 2016.
In a press release, Cornish Bakery said Kaziewicz will spearhead the development of a range of new food products and work with its wider product team to refine its premium pastry, cake and pasty ranges.
“I’m thrilled to be joining Cornish Bakery at such an exciting time. The brand already has a strong reputation for quality and craft, and I’m looking forward to building on its heritage with new ideas, bold flavours and best-in-class bakery products that surprise and delight our customers,” Kaziewicz said.
Cornish Bakery, which currently operates 66 stores across the UK, has added apple crumble scones, raspberry crème brûlée pastries and feta and pea tortillas to its food menu so far in 2025. Its premium bakery menu is complemented by specialty coffee supplied by London-based Union Hand Roasted Coffee.
“We are delighted to welcome Arnaud to the Cornish Bakery team. His impressive global experience, creative flair and deep passion for product makes him the perfect person to take our food innovation to the next level. His appointment reflects our company's ambition to ‘aim higher’ in everything we do – from the products we offer to the overall customer experience, as part of our belief that ‘bakery is the new coffee shop’,” added Mat Finch, Managing Director, Cornish Bakery.
Kaziewicz joins Cornish Bakery as it gears up for accelerated outlet growth. In June 2025, the Somerset-based business said it had identified nearly 350 potential new sites across the UK, with expansion focused on tourist hotspots and high streets.
Since the start of 2025, Cornish Bakery has recorded a 9% year-on-year increase in like-for-like sales, driven by record trading during the Easter and May Bank holiday periods.
